That headstock logo, or at least portions it, are definitely not original (3 different fonts?). Also says the racing stripe is not original.

I don't think the price would be impossible to get for one of these in perfect condition, but there's probably too much non-original paint on this one to justify it.

For a '68 Mustang... the decal might be legit. They had like three or four different versions of the decal throughout the mid 60s before they settled on the matching font one. This might be an early early '68 or even late '67.

I'm not very good in French but as I understood the bass used to be a 3 tone sunburst and was refinished in LPB.

I am no expert but I think you're right, oval tuners show up in 66, although not just with Jazz. I thought they continued to creep into 68 lefty builds if they still had parts around, e.g., I have a P bass, assembled in 68 based on pots, but with other parts (neck, p/u) dating to 66-67, including maybe the oval tuners on it (of course, there is no date stamp or other identifiers on tuners). I guess I figure if it has oval tuners, it's from somewhere in the 66-68 range. :-)

As always what maybe the case with right handed instruments is not necessarily true for lefty's, but that would seem to be the correct time period.
Here's a 65 P bass that's been listed on Ebay for a long time that has lollipop tuners also.
