I want the early style with the long, riveted "stem". Any ideas?

Awesome! Thanks man. Now, next question: any idea what size tuner holes a MIM Jazz neck has?

If you are using standard elephant ear tuning pegs, you should be able to reverse a RH version, .... dismantle the whole tuning peg and fit it back for lefty. Done it a few times and I don't bother looking for lefty ones.

Not necessarily. Some of those type tuners like on the Kluson style and the ones from the rest of the 60s and early to mid 70s are built in a way that they can't be dismantled.
